Black Cherry Juice Cake
Today I’m sharing another recipe I came up with using a basic yellow cake mix! My neighbor bought a few bottles of black cherry juice but no one like it so he gave it to me. (See even the neighbors know I can come up with a plan for anything!)
One day I decided to make a quick and easy cake from box. Well I happened to see the bottle of juice and came up with an idea, I would make a black cherry juice cake. The juice is 100% juice has no artificial colors, flavors or preservatives!
I added the eggs and oil but instead of adding a cup of water to the cake mix I used the black cherry juice! I made 12 cupcakes but had batter left so I made a loaf cake.
The muffins were in the oven baking and while waiting to put the loaf cake in I became creative again.
I added mini marshmallows, coconut chips which are larger pieces than shredded coconut and a mix of white chocolate chips with dried strawberries and graham cracker bits. I just dumped a handful of each to the top of the cake which was already in the pan then swirled it around the batter with a knife.
While the cake baked, the “extras” went all through the batter, melting the chips and marshmallows. OMG I let it cool slightly before I to gave it a try. Another creative idea that turned out delicious and so moist. I took some of the muffins and a few pieces of the loaf cake to my neighbor and while neither liked the juice plain, they loved the black cherry juice cake!
So now that I made this cake, I plan to try using pineapple juice or orange juice next time I bake a cake. What would you add to a basic cake mix to give it excitement?

Cherry juice – I haven’t seen it around since I was a kid! My neighbor actually worked for a fruit juice manufacturer, and she would often give us bottles with faulty labels and stuff. Cherry was my favorite flavor. She was a special person, sort of our other Grandma. Once my brother and I were home alone and we thought it was a good idea to do a craft that involved melting wax. Well, some spilled, over the kitchen table. Did I mention the wax was red..? In my desperation I went over to our neighbor and asked for help. She grabbed her iron and made her way to our house. We almost got everything out.. You could still see a faint pink shade, and of course Mom found out, but I think she was glad nobody spilled hot wax over their fingers.
Well, isn’t it interesting, you write about cherry juice, and boom, this memory pops up in my mind. Thank you! She died, 97 years old, a couple of years ago. Her favorite cake was her special red currant pie, btw.

Definitely pineapple juice! I drink it every day. I’m not sure I have ever tried black cherry juice, but your loaf cake and muffins look delicious.
By added juice instead of water it gives the cake a unique taste Jeanine. I love pineapple juice too Jeanine and I would add coconut to the cake!
Martha, how delightful! Black cherry juice is very anti-inflammatory, so I’m glad you worked it into a cake. Looks yummm! I do love instant pineapple upside down cake: sprinkle brown sugar generously across a heavily buttered 9 x 13 pan; drain well one can of crushed pineapple, keeping the juice; sprinkle one yellow cake mix DRY across the pan; pour the pineapple juice artistically over the dry mix. Bake at the temperature and with the time recommended on the box. It turns into cake! Chopped pecans would be good in the brown sugar layer also.
