Beef Stir Fry
Sometimes I think my blog should be a foodie blog with all the baking and cooking posts Lia and I share. Today I have yet another recipe I came up with, nothing fancy but sure was delicious and probably borderline healthy. This is my beef stir fry, just another meal I prepared yesterday.
You might remember reading about my Costco trip where I purchased a 5 pound package of stew beef for $22.63. I repackaged it into five one pound bags for the freezer and I knew I could come up with a variety of different ways to prepare delicious meals for about $4.50 per bag. I didn’t figure cost per meal but I know it’s a very inexpesive meal to put together. Without further ado, here is the first meal I made with this stew beef purchase.
I cut the stew beef into smaller pieces and added worcestershire sauce over it. Next I cut up two onions and a few baby carrots then added some of our garden peppers Lia and I cut up for the freezer. It’s great to have them on hand for meals like this.
I drizzled avocado oil and a pat of butter to a frying pan and added the vegetables to slightly brown. Then I pushed them to the edge of the pan and added the stew beef in the middle to brown and cook.
My creation smelled so good when it cooked but I kept thinking I wanted to add something else but I didn’t know what. Then I had a flash back of when my grandmother would make swiss steak with tomatoes. So I added some diced up tomatoes for the finishing touch!
Dinner was ready to eat in less than half an hour! Rich had his leftover half a sweet potato and I served my stir fry over brown rice. The meat was so tender and the tomatoes gave it a great taste.
