Baking with Sunshine

It’s Friday Story Time by Lia and the past few times I’ve baked I came up with my own recipes. I would pull the ingredients out of the cupboard and start mixing everything together. Ma would watch me and write down the recipe as best as she could. A new thing I do when baking is add a special ingredient, yellow sugar sprinkles to everything because that’s adding sunshine to my recipes. So today is baking with Sunshine.

Lia’s Sunshine Blueberry Cake

It was Thanksgiving and everyone was stuffed from turkey and ham. I pulled a chair over to the cupboard and reached for a bowl. Ma came over and asked me what I was doing and I told her I was going to bake a cake. Next I went to the pantry and brought out the container of flour and sugar then asked ma if she would reach me the “white powder” we use. She asked if I wanted baking soda or baking powder and I told her both please plus I needed the vanilla.

I mixed all the ingredients together then added some milk and water. Of course I had to test the batter along the way and so far it tasted great. Then I added fresh blueberries to my ingredients.

Next I got three different kinds of sprinkles from my cupboard. I used pastel sprinkles, chocolate ones, peppermint and yellow sugar sprinkles. I added the yellow sprinkles for sunshine.

My cake batter was finished and ready to put in the baking pan. While the cake was baking I washed all my baking bowls and about 25 minutes later my cake was done and it smelled so good. It also tasted delicious! When tasting my cake that’s when I came up with the name of Lia’s Sunshine Blueberry Cake!

Recipe best as Ma could keep track!

2 cups of flour

1/2 cup sugar

1/2 teaspoon baking powder AND baking soda

1 teaspoon vanilla flavoring

3/4 cup milk

1/4 cup water

1 cup blueberries

LOTS of sprinkles maybe 1/4 cup of each

Spray sheet cake baking pan with PAM and pour in the batter

Bake at 350 degrees for about 25 minutes

Lia’s Unicorn Marshmallow Cupcakes

My next baking creation was a few weeks later when daddy and I were over at Ma and Pop’s house after school. I wanted to bake but I only had 40 minutes before I had to be home. I was sad when ma said I didn’t have enough time. But then she came up with the idea of making cupcakes because the would bake quicker than a full sized cake.

YES, I could bake so I hurried and got the ingredients ready. I got the flour, sugar, baking soda and baking powder plus the milk and water. I cut down on the amount of flour and sugar since I was only making a few cupcakes. I added three flavors of baking chips, chocolate, white chocolate and caramel plus three types of sprinkles including my yellow sunshine sprinkles and mini marshmallows! I had daddy come in the kitchen and I showed him how to mix the batter!

I filled nine muffin cups with batter and baked them for 15 minutes. They were done in enough time for us to taste them! Again it was another great recipe. BUT after we finished eating some, Ma looked at me and asked if I added vanilla. NO, I FORGOT THE VANILLA! But I added unicorn sprinkles, pink sprinkles and my yellow sunshine sprinkles so ma said that flavored them just right.

Lia’s Unicorn Marshmallow Cupcakes

2/3 cup flour

1/2 cup sugar

1 teaspoon baking soda AND baking powder

1/4 cup milk AND water

1/4 cup each of chocolate, white chocolate, and caramel baking chips

LOTS of sprinkles again but I cut back to a few tablespoons of each

Fill baking cups about half full and bake at 350 degrees for 15 minutes

What do you think about my new recipes? I had fun coming up with these and I like adding Sunshine to everything I bake, it goes with my Lia’s Sunshine Bakery name!       Lia says thank you and to think it was because of you starting to call her Lil Ms. Sunshine Brenda. That’s where Lia’s Sunshine Bakery came from and not the sunshine in her recipes! Hugs and love from Lia and me.

  3. Oh my goodness! I love the baking recipes (and the stories). I will have to save these and try them with my children one day! Sometimes the best recipes come from the ones you “throw together”.

    You need to video before you start baking then you can say how much of each ingredient your using and then ma can copy it down into a notebook or you can and create cookbooks you can give as Gifts featuring your recipes. In the meantime I would like a Unicorn Cupcake and so would my niece Lily because she and I love Unicorns and would like to have one as a Pet.     Lia, your Ma told me about the yellow sprinkles you’re adding for extra sunshine, and I love this! We can all use all the sprinkles and sunshine we can get!
    I bet it’s hard keeping up with your enthusiasm and creativity… taking pictures, writing down the measurements, but I’m sure Ma loves it and wouldn’t have it any other way.
