Baking Day Again Banana Bread
It’s been raining and chilly most of the week so I didn’t get to play outside much. Mommy was busy doing computer work yesterday so GGMama and I had a baking day again. That means I get to write another Friday Story Time by Lia!
Banana Bread with Applesauce
I love bananas but I couldn’t eat them fast enough so they were getting too ripe and soft. Mama said we should make banana bread so that’s what we did. But she knows I like applesauce so we added some of that to the recipe.
First I had to mash the bananas then I mixed them with the applesauce, sugars and eggs.
The next step was to add the flour, baking powder and cinnamon and mix them together. I know how to turn the mixer on all by myself now! When mama tells me it’s okay, I turn the button one click but sometimes I click it 3 times and mama has to turn it down! Doesn’t this look yummy?
While mama poured the batter in the pan, I was eating it! I could have eaten it all up but I licked the spatula instead.
While the bread was baking, it smelled so good. An hour later, my bread was done and after letting it cool for a bit mama and I had a slice with butter. YUMMM, this banana and applesauce bread is soft, moist and delicious!
I love baking at GGMama’s, we never know what we will make on our next baking day! Mama says we’re making memories, I wonder what they will taste like.
Banana Bread with Applesauce Recipe
1 cup mashed bananas
2 eggs
1/2 cup granulated sugar
1/2 cup dark brown sugar
1/2 cup applesauce
2 cups flour
2 tsp. baking powder
1 tsp. ground cinnamon
Mix the bananas, eggs, sugars and applesauce together. Add flour, baking powder and cinnamon and mix until moist. If you want to add nuts, add them after everything is mixed together.
Pour in 5″x9″ greased loaf pan and bake at 350 degrees for 1 hour.
Cookie Bites
After the bread was done, there was one banana left so mama made some cookie bites! She took the banana, mashed it up, added 3/4 cup of oatmeal and then tossed in about 1/3 cup of dried cranberries. It made 15 cookies and only needed to bake for about 10 minutes at 350 degrees. These little bite sized cookies are just the right size for my snack and mama says they are healthy too!
These are so quick and easy to make so instead of throwing away an over ripe banana, make some quick cookie bites!

I’m so glad Lia’s baking brings back memories for you Brenda! It brings back so many memories for me also when Lia’s mommy would bake with me when she was Lia’s age. She still bakes today! The apron is the same one mommy worn way back when!
