Topping Options when Baking Cakes

Are there times when you want to bake a cake but don’t have the time or ingredients to make one from scratch?  I’m going to share a few secrets on some options I use when baking cakes!   I started out with a box mix of vanilla cake and added the batter to a 9″ x 13″ sheet cake pan.  Since frosting isn’t a big thing for our family, I like to come up with other topping ideas.

For my vanilla cake, I sprinkle it with a cinnamon and sugar mixture then swirled it with a knife so the mixture goes through the cake.  When it’s finished baking, the cinnamon and sugar is not just on the top but through the entire cake and it’s oh so good!  I then experimented with a few mini cupcakes with the leftover batter.

Half of them I added a small amount of the cinnamon and sugar, the other half I put a small amount of raspberry jelly.  When baking, the jelly sunk to the middle of the batter and it tasted like a jelly filled donut!

For my chocolate creation, again I started with a box mix of cake and after adding the batter to the 9″ x 13″ sheet cake pan, I sprinkled half with organic fine shredded coconut.  For the chocolate cupcakes, I added coconut to some and the raspberry jelly to these also.  The coconut topped one reminded me of a coconut topped donut and the chocolate with raspberry jelly was just the perfect amount of sweetness.

I usually use a spoon when filling my cupcake pans but found my coffee scoop works perfect and there is no mess when pouring it into the cupcake lines like there is when I use a spoon.

I have read that eating raw cake batter and cookie dough is unhealthy.  I’m wondering how long it takes for symptoms to show up because I have been finger licking the batter from bowls and beaters for almost 70 years now! That was one of my favorite things to do when I help my grandmother bake and it was almost a daily thing!

So here are my two cakes with quick and easy toppings that equals delicious desserts or even breakfast!  The other thing about baking a cake with toppings, you don’t have to wait until it’s cool to add frosting which means you can eat it that much quicker!  There are so many different toppings you can add to cake batter for a delicious alternative to frosting, what are some of your favorites?
