Baked Broccoli & Cauliflower
I was playing with food again and came up with the most delicious baked broccoli & cauliflower dish! But that’s not the only ingredients, I added bacon, cheese, dried cranberries and slivered almonds. The cranberries gave it a delicious sweet taste!
I started by adding 2 cups of broccoli and cauliflower to a mixing bowl. Next I crumbled 3 strips of bacon and added that along with 1/3 cup shredded cheddar cheese, 1 tablespoon of softened cream cheese, 2 tablespoons of milk and 1 egg, well beaten. Mix all these ingredients together then I added 1/3 cup of dried cranberries and 1/4 cup of slivered almonds, carefully tossing them together with the broccoli and cauliflower mix. I also drizzled a very little bit of Avocado oil to the mixing bowl.
I put the mixture in a glass baking dish and covered with more cheddar cheese and baked it for 20 minutes at 350 degrees.
When it was finished baking, I added more cheese to the top and turned the oven to 375 degrees for two minutes. My casserole not only tasted good but it looked good too!
Recipe for Baked Broccoli & Cauliflower
2 cups of cut up broccoli and cauliflower florets (I used frozen but I would rather use fresh if available)
3 strips crumbled bacon
1/3 cup shredded cheddar cheese
1/4 cup dried cranberries
1/4 cup slivered almonds
1 tablespoon softened cream cheese
2 tablespoons milk (whipping cream would be my choice if available)
1/4 cup additional shredded cheddar cheese for topping while baking
Seasoning to taste
My recipe made enough for two large serves so depending on the number of meals you are serving you may want to double the recipe. I have enough left over for my tomorrow night’s dinner! It’s delicious and filling!
I served my casserole with a pork chop and what a delicious meal it was! When I create new recipes I come up with afterthoughts and this one was no different. I used frozen broccoli and cauliflower but would prefer using fresh if available. I would also rather use whipping cream instead of milk. Of course you could use any cheese to your liking but I love cheddar. As for those who don’t eat meat, I’m thinking I’ll try this with tuna or salmon next time! Another afterthought was I could turn this into a cold salad meal! I would use fresh broccoli and cauliflower, add salmon or tuna and even hard boiled eggs, omit the milk and make a cream cheese dressing. Yes, that will be my next recipe to try and it sounds like a meal in itself! But definitely the cranberries and almonds were a great addition to my baked broccoli and cauliflower meal!
Kill the bacon and the pork chops and I’m in. Actually, I plan to cook that version for my vegetarian guests tomorrow night.
