Back on Track – Week 2 Healthy Eating Plan
It’s time to update you on my Back on Track -Week 2 Healthy Eating Plan. If you missed week one, here is the link. http://themarthareview.com/back-on-track-week-1/ I’m getting back on track from last January and this coming January I will see how I’m doing compared to last year. With Lia’s help with healthy breads and cookies I think I’ll do good.
Day 8
Sunday was my total liquid diet for my colonoscopy on Monday so for breakfast I had a refreshing glass of iced tea and for Sunday dinner I had a delicious mug of chicken broth. I kept forgetting to use my Corelle soup mug I’ve had for awhile!
November 9
I’m back to eating again! After my colonoscopy this morning they were finally able to wake me up but I slept another 3 hours after I got home. My dinner was delicious fried cabbage with bacon!
November 10
After not being able to eat anything Sunday and sleeping most of Monday, I made a delicious omelet for breakfast with a glass of orange juice. Two whipped eggs, added 2 tablespoons of low fat cottage cheese, crumbled 1/2 strip of bacon, shredded cheese and topped with swiss cheese about 3 minutes before it was done. Dinner was T-Bone steak cooked with onions but I cut it in pieces after I cooked it and added it to brown rice then covered with peas. I gently mixed all the cooked ingredients together and was it delicious. The 2 T-Bones were almost 2 pounds and cost $8.90. There is enough left for one more dinner so Rich will have that tomorrow while I devour my left over cabbage.
November 11
I guess you could say since I haven’t eaten much since last Friday and lost 5 pounds, I made up for it today. Lia has also been under the weather and needed some extra loving so her and I shared a bowl of applesauce for late breakfast about 11am. Dinner was not one but two Chick-fil-A chicken sandwiches and half a carton of fries. Plus I had a survey on the receipt and got a coupon for a free sandwich! I’ll get back on schedule tomorrow.
November 12
Breakfast was low-fat cottage cheese with pineapple chunks. Dinner was left over cabbage and bacon. I re-fried it in a teaspoon of butter and was it delicious.
November 13
Friday started with peanut butter Kind breakfast bars and orange juice. For dinner I made a big pot of chili and there will be leftovers for tomorrow! Lia also made peanut butter with oatmeal cookies so of course I had to sample a few of them but oatmeal is healthy isn’t it? I love how she washes the mixing bowls and utensils when she’s finished baking!!
November 14
Breakfast was 3 of Lia’s peanut butter with oatmeal cookies. They are almost like a breakfast bar, so delicious and healthy. Plus I had a side of applesauce. We had left over chili for dinner and it always tastes better the 2nd day! As for my downfall to my healthy eating plan, I picked up a box of Italian cookies while shopping today. I only had 3 of them through out the day so not bad considering I can usually eat the entire box in one sitting. Two weeks down, 6 to go until I check my score from last January.
This isn’t on my healthy eating plan but I made butter today, it turned out very good.
Two weeks down about six to go until January when I will see how my healthy eating challenge went. Until then I’ll keep on doing what I’m doing and try to eat as healthy as I can.
That’s awesome. I’m trying to get my diet more healthy too. Every little change helps.

No one eats healthy during the holidays. Especially, with the best little chef.
