Back on Track – Week 9 Healthy Eating Plan

The beginning of November I started my getting back on track eating plan. I originally started my healthy eating plan in August 2018 when I had been diagnosed with non-alcoholic fatty liver disease. I noticed a few months prior to November some of my stomach issues had returned and I needed to nip it in the bud! So here is my last of the series Back on Track – Week 9 Healthy Eating Plan. Last week was Christmas week so it might not look all that healthy but it sure was delicious. If you missed that week, here is the link: http://themarthareview.com/back-on-track-week-8-heathly-eating-plan/ My Healthy Eating Plan doesn’t follow any diet plan, I just try to cut way down on sugars and sweets. My original plan cut out white bread, potatoes and rice which helped me with my liver and gall bladder problems. I stick to that often but sometimes it’s just not possible as you will see from the following delicious meals. I’ve found that portion control and eating slower is a big help.

December 27

This is the last week I’ll be tracking my meals but I’ll be sharing a monthly update with my exciting healthy lifestyle. Today for breakfast I had oatmeal with Smucker’s Simply Fruit spread mixed in it. Dinner was out of the ball park! I cooked the rib roast we received as a Christmas gift and it was cooked to perfection if I do say so myself! I cut up potatoes, sprinkled with an envelope of Lipton onion soup mix, drizzled with avocado oil and baked them for about 25 minutes. I made my specialty of green beans with sautéed almonds to top off the meal. Everyone loved the meal that was fit for a king!

December 28

Oatmeal with cinnamon on a chilly morning makes a great breakfast. Dinner was left over meatballs and pasta. After Christmas dinner I froze a batch to have on hand. There is enough leftover leftovers for tomorrow! I still have brownies sitting on the counter from Saturday.

December 29

Okay it’s not so healthy but sure was filling. Breakfast was whole wheat toast with Simply Fruit spread. Early dinner was spaghetti with leftover meatballs and sauce. Lia made a cake with pink fluffy frosting and she twisted my arm to try a piece. It was delicious!

December 30

Today breakfast was whole wheat toast again. Early dinner was quick and easy but delicious. I cooked some brown rice, added it to a pan with a small amount of butter, added a pouch of salmon and fresh/frozen peas and cooked them together. Delicious and colorful meal. I had to have a snack of Lia’s cake again only because it was so good.

December 31 New Year’s Eve!

Breakfast was whole wheat toast. Dinner was shrimp, scallops, crabmeat salad and potato salad. Lia helped me peel the shrimp for shrimp appetizers! Wishing everyone a Happy and hopefully Healthy New Year!

January 1

Breakfast was a cinnamon bun that I shared with Lia but I forgot to get a picture. But look at dinner! I bought 2 bags of sea scallops yesterday and had one today. I sautéed the scallops and shrimp in butter and seasoning. Just before they were ready to serve I added lemon butter sauce to the pan. It was delicious and with a side of crabmeat salad it was very filling!

January 2


Today’s breakfast was yogurt with a cut up banana and raspberry granola. Wait until you see dinner! My granddaughter Alexandra made lasagna loaded with 4 different cheeses! It was so delicious and I meal prepped the extra for 5 more meals For an evening snack, Lia and I had a few oatmeal cookies and a glass of milk. Even though my meal “tracking” is over I will still be sharing some healthy recipes and I’ll be posting monthly updates on my progress.

  2. To each their own. Most of what you chose would be stuff I’d avoid (both for kosher reasons- and dietary choices). But, it that’s what keeps your fatty liver disease in check, then NO ONE has the right to quibble with it.

      Thanks Roy, that’s my goal to say healthy. While some of my meals aren’t considered healthy, at least we have given up fast food joints!

    You had me at the shrimp! It’s amazing that eating healthy can be so delicious. Usually, when l hear “healthy” , I’m done :-). Very nice.

      I’m finding there are many delicious healthy foods Kemkem. I love fish especially shrimp, salmon and tuna. I only eat Alaskan wild caught salmon, none from other countries. We get the shrimp and scallops for our local seafood store. Can’t get any fresher than that!
