Back on Track – Week 8 Healthy Eating Plan

December 20
I changed my breakfast menu today, had a bowl of oatmeal with cinnamon topping. Dinner was another yummy meal. I cooked pork chops in avocado oil and were they juicy! Completed the meal with cheesy mashed potatoes and broccoli with cheddar cheese sauce. Since I had a piece of birthday cake left from Carlo’s party, I had that with a glass of milk for a snack.
December 21
Started out with pancakes for breakfast and an appetizer before dinner was cottage cheese with crushed pineapple, a few maraschino cherries, sprinkled with strawberry jello mix and a few squirts of Redi Whip. Some of my FB readers said it didn’t look good… but it is delicious! Dinner was a store bought Chicken Alfredo pizza from Aldi I found in the freezer. Not bad for store bought, good amount of chicken and cheese.
December 22
Breakfast was whole wheat toast with a glass of Mandarin orange juice. I hit the jackpot at Jersey Mike’s today. They had a special of buy 2 giant subs, get one for $2.99 plus it was double points day! Rich had steak with peppers and onions, Alex had the Italian meat loaded Mike’s Way and I had the roast beef with provolone cheese, lettuce and tomato. Half a sub was plenty so now we have our dinner ready for tomorrow! For a snack I had a few Italian cookies.
December 23
Breakfast was yogurt with cut up pineapple slice and raspberry granola. I had the leftover half of yesterday’s Jersey Mike’s roast beef sub for dinner and a refreshing after dinner drink of pineapple juice, maraschino cherry juice with a splash of coconut flavoring over ice.
December 24
Breakfast was whole wheat toast with peanut butter. My sweetie made a big pot of meatballs for Christmas dinner but we had to try them today! Dinner was a plate of delicious meatballs covered with mozzarella cheese. I munched on a few homemade shortbread cookies while Lia was getting ready to help Santa with some deliveries.
December 25
We had a late breakfast, omelet with whipped eggs, chopped onions, crumbled bacon and topped with cheese. Dinner was Rich’s delicious meatballs. I decided to have a sub so I added mozzarella cheese to both sides of the roll, added she meatballs in the center and microwaved to melt the cheese…. delicious and so filling. I just finished a late night snack of a few of Lia’s shortbread cookies and a cup of hot cinnamon spice tea. The cookies melt in your mouth and the tea was perfect for relaxing on a chilly Christmas night.
December 26
Another week done and I celebrated. For breakfast I had a KIND dark chocolate with cherry and cashew bar. Alexandra gave me a convection over for Christmas and I had to try it out with my meatball sub. Look how great it melted the cheese! I’ve been on my Back on Track Healthy Eating Plan for 8 weeks and haven’t had many sweets but today Rich dropped a package of brownies in the shopping cart. For an after dinner snack I had a brownie and glass of milk. Hey it’s a good way for me to drink milk!
I have only one week left to track my healthy eating but that doesn’t mean I will go back to my old eating habits. I’m feeling so much better during these past eight weeks plus I’ve made some delicious meals. See you next Saturday for the finale of my Back on Track Healthy Eating Plan.
It’s clear to me that your definition of healthy eating and mine are vastly different. Cake, full-fat meat and cheese sandwiches (with lots of bread), etc…

Well I’m trying Roy! From where I was 2 years ago, I’m so much healthier inside. Since I started by Back on Track in November, I’ve dropped about 6 pounds. It may not be the “traditional” healthy eating but I have cut way back on sugar and that’s why original messed me up.
You’re doing great, Martha!! Those meals sound yummy. After several days of celebrating Christmas, I’m going to need to do a little getting back on track, too! I’d love to know more about your process when you are getting back on track. Or, really, how you do the meal planning. Maybe you could do a future post about it. Say, a template for successful healthy eating? 😉
That’s a great upcoming blog topic Jeanine. I was actually thinking of doing something on that line. My healthy eating plan is nothing set in stone and it’s probably not as healthy as some would like but it fits my lifestyle. I’ll work on a finale to by 9 week healthy eating plan!
My husband did all the cooking, so my meals now are simple and stress free. I just read where fasting 4 times a year stimulates stem cell growth in the brain, thus preventing dementia. I am looking into that, now!! lol
WOW that’s interesting Kate about the fasting. I’ll have to check that out.
All those dishes look so good. I’ve been working out a few days a week and so far I lost a few pounds.
That’s great Amanda, they say it’s better to lose a few pounds slowly and they will stay off better.
