Back on Track – Week 7 Healthy Eating Plan

December 13
Breakfast was a blueberry muffin and dinner was left over cube steak and onions from yesterday. I made brown gravy and poured it over the steak and also had a side of brown rice with gravy. For snack I have 3 homemade oatmeal and raisin cookies. Not bad today!
December 14
I love zucchini bread and by freezing zucchini from our garden during the summer Lia and I can make bread in the winter! For breakfast I had 3 small slices of delicious lemon zucchini bread. Early dinner was a cheeseburger with fries and snack was 3 homemade healthy oatmeal cookies with raisins and pecans. Two out of three isn’t bad
December 15
What delicious meals I had today! For early breakfast I had a dish of mandarin oranges and 3 oatmeal raisin cookies. (I figure they are no different than a breakfast bar and maybe even better because they are homemade) About 10am Lia wanted an egg so I made eggs for everyone. I scrambled them with a little heavy cream and of course I added cheese to Lia’s and mine. Dinner was salmon patties made from a pouch of salmon, there is enough for 2 patties. To the salmon I added an egg, Italian bread crumbs, seasonings, and fried with avocado oil and sprinkled with lemon juice a few minutes before I finished cooking them. I had a side of seasoned noodles. Delicious and filling meals today!
December 16
Breakfast was a blueberry muffin then Lia made banana bread right after breakfast! We each had a warm slice with butter! I went all out for dinner. Had a package of sirloin beef tips, cost $2.08, cooked it with onions and brown gravy. Added mashed potatoes and fresh/frozen green beans sautéed in butter with slivered almonds. I think I found a new vegetable dish for me, Rich had plain green beans.
December 17
Breakfast was 3 small pieces of Lia’s banana nut bread, oh it’s so good! Dinner was a burger with a few fries and onion rings from Fuddruckers. I couldn’t pass it up, they had a BOGO burger free for today only. Throughout the day I also munched on a few of Lia’s oatmeal raisin cookies.
December 18
Breakfast was my last blueberry muffin and dinner was a delicious salad with cut up chicken and lite vinaigrette dressing. I made Italian drop cookies after dinner and had to try one right out of the oven….. delicious!
December 19
I’m ending my week with a bang! Breakfast was whole wheat toast with Simply Fruit spread. Dinner was scrumptious! I got 2 T-Bone steaks for $4.83 and cooked them with onions. But the best part was the green beans with sautéed almonds. I cooked some the other day in butter but today I browned the almonds in the pan I cooked the steak in and the juices leftover gave the almonds and green beans an awesome taste! Add a sweet potato and what a delicious meal. We went to Lia’s little friend’s birthday party today so if course I had a piece of black forest cake. What a way to end my day.
I’m pleased with my Back on Track – Week 7 Healthy Eating Plan especially the slivered almonds and green beans. That could be a meal in itself! I have two more weeks until I finish this segment but I’m not giving up, I’m adding more to it! See you next week!
