Back on Track – Week 6 Healthy Eating Plan
Gosh I just completed my Back on Track – Week 6 Healthy Eating Plan, it seems like I just started! I’m doing good on staying on track even though a few meals may look a little sweeter than they should. But Lia made brownies on Tuesday and I had one when she made them and haven’t had any since! December 6
Breakfast was yogurt with pineapple slice and mandarin oranges with cherry in top. (Can you tell I love this kind of breakfast?) Dinner was boneless, skinless chicken breasts browned in avocado oil with bacon pieces, broccoli and cheddar cheese. I added a side of brown rice and was this a delicious meal. My snack was 3 of Lia’s raisin spice cookies with a glass of milk.
December 7
Breakfast was a Cranberry Almond bar and dinner was the left over chicken with broccoli, bacon and cheese. I added a sweet potato for a yummy meal. I love preparing chicken this way because one huge chicken breast is enough for two meals.
December 8
Starting off breakfast with a KIND dark chocolate breakfast bar of nuts and spices with a side dish of mandarin oranges. Dinner was fettuccini alfredo with a side of steamed broccoli and a sweet potato. Since it was National Brownie Day, Lia whipped up some brownies. I need to add more milk to my diet and since I can’t drink just milk, I had a brownie washed down by the milk.
December 9
Breakfast was yogurt with cut up banana and mandarin oranges, topped with raspberry granola. Dinner was not only delicious but the package of beef strips was on sale for less than $4.00 and I made a meal for two from it. I sautéed onions and the beef then added a package of gravy to the pan. I topped this over mashed pot with a side of fresh, frozen green beans. I also tried sushi for the first time! Alex gave me one filled with crab and avocado! Not exactly excited over it but at least I tried it. For a snack I had a few cheddar flavored cauliflower stalks. Can you believe I didn’t even have a brownie tonight!
December 10
Breakfast was whole wheat toast with Simple Fruit spread and applesauce. Jersey Mike’s had double points today so we had take out subs. I love the roast beef with lettuce, tomatoes and mayo. They roast beef is real, not rolled or processed so it’s healthy. On another note, Lia made her brownies 3 days ago and I haven’t had any except the first day she made them!
December 11
Today for breakfast I made scrambled eggs topped with swiss cheese and 2 sausage links along with a glass of pineapple juice. Had another busy day so after shopping we stopped at Chick-fil-a for chicken sandwiches and fries. But what a deal I got! We ordered 3 chicken sandwiches and a large fry, I had a coupon for 1 free sandwich from a previous survey I took then when I went to my app and had a surprise coupon for large fries!
December 12
I had a delicious blueberry muffin for breakfast! For dinner I cooked a double batch of cube steak with onions so dinner is ready for tomorrow! I added sweet potatoes and carrots for a filling meal. The package of cube steaks was $6.84, not bad for two meals for hubby and me. I found some baked puffs at Dollar Tree, no cholesterol, 18g. carbs and 2g. sugar. They have 0g. trans fat, gluten free and kosher dairy, all that for $1.00 so I can have 4 or 5 servings of snacks from one bag!
I have finished 6 weeks of my Healthy Eating Plan and I’m feeling great. Only three more weeks until January when I will re-evaluate my Back on Track Healthy Eating Plan that I started the beginning of November.
