Back on Track – Week 4 Healthy Eating Plan

I have just completed Back on Track – Week 4 Healthy Eating Plan. I’m half way through my 8 weeks healthy eating challenge when it will be time for the January Ultimate Blog Challenge where I will post my thoughts of how my plan went. November 22

Well I started the week with nothing but healthy! Breakfast was a dish of applesauce and eggs. Okay it was egg salad but still an egg! I also made a batch of my trail mix and had a small dish of that to munch on during the day. But dinner, oh my! If you saw my yesterday dinner of chicken, broccoli and cheese, I had almost the same thing but I added bacon to the mix with the extra chicken breast. So whipping cream, broccoli, cheddar cheese and crumbled bacon poured over the cut up chicken that I pan fried in the bacon grease, it cooked up so much better than cooking oil. I also had a side of brown rice drizzled with the extra sauce from the chicken. Delicious! Since Rich isn’t into all my concoctions I cooked him steak with onions, sweet potato and broccoli. 🤗🥰

November 23

I received a box of Built Protein Bars to try so for breakfast I had the Apple Almond Crisp, it was delicious! Noontime I had a snack of cottage cheese sprinkled with a small amount of dry jello mix and a few squirts of coconut flavored whipped topping (Like Reddi Whip) The hint of coconut with strawberry was yummy! Dinner was chicken fettuccine alfredo. Okay so I’m in a chicken kick but it was good! Lia made cookies late at night and of course I had to try the one!

November 24

Since Lia’s tummy was a bit messed up from her antibiotic, her and I shared some applesauce for breakfast as part of the BRAT diet. For dinner Rich and I had salad with cut up chicken and lite Vinaigrette Dressing from Zaxby’s. There was a method to my madness, I mean meal… I had a coupon, buy one salad and a medium drink (I got unsweet tea) and get a salad free. 🤗

November 25

Breakfast was whole wheat toast with all natural fruit spread. Dinner was delicious! I made my own version of a salmon patty with bacon and cheddar cheese, similar to one I had last week from Publix. I used a pouch of salmon, adding an egg, bread crumbs, bacon, cheese and seasoning. With a side of brown rice my meal was very filling. I can’t remember if this is suppose to be my cheat day but Lia made brownies and I had to sample them! Plus I only drink milk when I have chocolate so it was a great way for me to get my vitamin D. 🤣 Lia and I shared a brownie with no fat coconut whipped topping. 🤗

November 26

Started breakfast with a delicious broccoli cheddar breakfast casserole http://themarthareview.com/broccoli-cheddar-breakfast-casserole/ (recipe from Chef William) with tangerine slices, raspberry tea and a rose from my sweetie. Thanksgiving dinner was delicious! Turkey, glazed ham, scalloped potatoes, candied sweet potatoes, green bean casserole, homemade cabbage salad from my grandmother’s recipe the best I can remember and cottage cheese with jello salad. For dessert a few hours later after all this settled was coconut cream pie. 🤗 Dinner was delicious but I didn’t go overboard on eating!

November 27

Breakfast was a banana then I had more of a lunch instead of dinner. Of course it was delicious leftovers from Thanksgiving. I had ham, sweet potatoes and green bean casserole. Did you ever notice how the second day they seem so much tarsier? For dinner snack I had left over cabbage salad which is my grandmother’s recipe as best I remember over the years. I have a coconut cream pie in the fridge that I didn’t even touch!

November 28

For breakfast I had plain yogurt with a cut up banana. Early dinner (or late lunch) was leftovers again, ham, scalloped potatoes, sweet potatoes and green bean casserole. I think we’ll have enough for one more day of leftovers but I don’t mind them at all! Our great grandboys visited for the day and Alek and I made mini donuts while Noah was the taste tester. So of course I had to have 2 of them. Yes they were delicious!!

I’m half way through my Healthy Eating Plan and what better months to do this during Thanksgiving and Christmas with all the baking Lia and I will be doing. But I’m watching what I eat and will check back with you all next week!
