Back on Track – Week 3 Healthy Eating Plan
Wow, I just completed Back on Track – Week 3 Healthy Eating Plan. So far so good even though I strayed on a few meals this week. Here is Week 2 update in case you missed it. http://themarthareview.com/back-on-track-week-2-healthy-eating-plan/ Now on to my update for my 3rd week of healthy eating.
November 15
I planned to have eggs for Sunday breakfast but I opted for 2 peanut butter and oatmeal breakfast bars that Lia made. ( I call them breakfast bars because they are as tasty and healthy as store bought bars)
But dinner was my breakfast, lunch and dinner rolled into one! This is a recipe I got from A Whole Foods Lifestyle with keto and Blue Zone Diets. Chef Chaney calls it a Broccoli Cheddar Breakfast Casserole but I call it an any meal casserole! It’s SO good and easy to make. Sauté’ broccoli florets, layer the broccoli, cheddar cheese and crumbled bacon in a baking dish. Whisk eggs and heavy cream with seasoning to taste together and pour the mixture over the broccoli mixture. Bake 350 degrees for 15-20 minutes. OMG it was delicious!! For after dinner snack, I indulged in an Italian cookie. I’m doing good with them, usually the package would have been gone the day I got them! November 16
Monday’s breakfast was 3 peanut butter/oatmeal breakfast cookies and glass of unsweetened tea. Dinner was a delicious salmon patty that had bacon and cheese mixed in it with brown rice and peas. Was this delicious I love fresh wild caught Alaskan salmon but this might be my next best way to prepare salmon in it’s not in season. It can be made with canned or salmon in a pouch.
November 17
On my Healthy Eating Plan for Monday one of my cheerleaders suggested I need more protein for breakfast. Since I only drink milk when I have chocolate cake or cookies, for my Tuesday breakfast I added a side of cottage cheese with my scrambled eggs. Nothing fancy in them, just a bit of cream whipped together with the eggs. Since Lia is under the weather I made her a special heart shaped egg. Something about adding cream to the eggs really fluffs them up. Dinner was delicious and I’m so glad I froze the peppers from our garden this summer. I just grabbed a few, cut them in pieces along with an onion and sauté with cut up stir fry beef strips. I served them on a bed of white rice with a side of organic crackers with my homemade butter. Notice the price on the beef, marked down to $2.42! There was enough for Rich’s and my meal and for once we didn’t have leftovers, it sure was delicious!
November 18
Well today started good for breakfast with Lia’s homemade cinnamon bread and a glass of orange juice. But from there it went downhill. We had to take Lia to the doctor for a sinus infection and she was great while there. Mommy told her she could have a shake from Sonic so of course mommy and I had to get one also since they were half price. While we were there we noticed it was dinner time so we all grab Sonic for dinner. I had a crispy chicken sandwich. Tomorrow is another day, I’ll try to do better!
November 19
Thursday wasn’t the greatest choice of meals. For breakfast I made pancakes and since Lia was still under the weather I made her a pancake shaped as a heart. Dinner was clean out the freezer day. I had fried shrimp and broiled red skin potatoes with onions.
November 20
WHAT’S THIS, A DONUT???? Okay, okay I’ll get back on track next week! Krispy Kreme had donuts on sale and since we were going to be putting Lia’s swing set up I know I needed some sugar to keep me going! Does that sound like a good excuse to have a jelly donut for breakfast?🤣🤣 But I made up for it at dinner, I had egg salad on a bed of lettuce with a side of cottage cheese mix with crushed pineapple. The best part was Lia helped me make the egg salad. On a good note, after 3 weeks of me getting back on track with my eating, my stomach is already doing much better!
November 21
For breakfast I had a bowl of applesauce but look what I made for dinner. I came up with my own recipe! I had 2 boneless, skinless chicken breasts that I cut in slices and pan fried in a bit of oil. I mixed 1/4 cup of whipping cream, 1/2 cup cheddar cheese and 1 cup of steamed broccoli together and poured over the chicken. On medium heat I let it simmer until the cheese melted. Add a baked sweet potato and I had one delicious meal! A week that wasn’t the best choices for healthy eating ended up with a delicious chicken and sweet potato meal. And the best part, there are leftovers!
Not sure what would be a dinner winner, Monday, Tuesday, Wednesday, Friday or Saturday since they were all delicious. I’m hoping I can get better on my breakfasts, maybe I’ll add a few fruit and protein smoothies! Until next week, I’m searching for healthy meals!
I love the pictures. And must try the Broccoli Breakfast Omelet!! It occurs to me, no matter what we cook at home, it’s infinitely healthier that eating out, even the best restaurants.
I am coming up with some great menu ideas Kate and yes, I do believe many are better or at least healthier then restaurants. At least I know what is in them. Let me know how you like the breakfast meal!
Loved the menus. OK, not the bacon or the meat and cheese- but they’re ok for you (NOT for me).
I generally keep to very healthy eating for 6 days a week- but I need my fix of noodles and cottage cheese. Not that they’re not healthy- they just are high in carbohydrates.
I’m trying to stick to healthy eating 7 days but as you can see, the milk shake got in the way this past week! Chef William said I should have a cheat day once a week, I think I may do that, and like you I wouldn’t go all out but maybe have something that is healthy but yummy. Like one of Lia’s healthy cookies! I love cottage cheese and sometimes I sprinkle it with sugar free jello powder and whipped topping.
You’re not doing too bad. I have been baking all week. I have been eating what I have been making; breads cookies and pies.
I’m trying Brenda! With Lia baking every week, it’s hard not to eat the entire batch of cookies, but I’m controlling myself. LOL Not sure what will happen on Thanksgiving!
I love those meal ideas. I really need to lose some weight.
I found that be eating healthy I not only shed a few pounds but I feel so much better inside Amanda! Most of these meals are quick and easy to make too.
