April 25th National Zucchini Bread Day
Do you know what day it is? It’s April 25th National Zucchini Bread Day!
Every year we plant zucchini in our garden and we usually have an over abundance of it! Lia has been picking the ripe zucchini squash since she’s been a few years old.
I love making zucchini bread and I would slice the zucchini in long slices then shred it with a knife. It worked good but then I received this nifty little Oster electric chopper to review. This is so much quicker and it chops it into smaller pieces than when I shred it with a knife. Of course Lia would help turn the chopper on then pour the shredded zucchini in a bowl to get ready for bread making.
We were picking zucchini every day and didn’t need that much bread so I decided to freeze it in silicone muffin cups, putting 1/3 cup of shredded zucchini in each muffin cup. After it was frozen I removed the zucchini from the cups and put them in a zip lock bag for the freezer. Other bags we put 1/2 cup in each bag and Lia wrote the date on the bags. The frozen cups are quick to thaw out and use for zucchini bread, the lose frozen bags are good for using in omelets or soup.

I love looking back when Lia was a little one, she has always loved baking and when we made this batch of zucchini bread she made it in butterfly shaped molds!

My mom was left-handed also and so is our oldest daughter. Like they say Kimberly, lefties are always right! LOL
I love zucchini!! In the fall when a few will get overgrown, I simply shred those up and put them in 2 cup measurements in freezer bags so I can cook with them all winter long. You can do the same thing with yellow squash as they don’t have any difference in flavor.

I don’t think I’ve ever tried zucchini bread, but I do like it if it’s fried. I’m glad to know it has health benefits. And as always, I love that you and Lia cook together.

Martha, when I was on chemo, you and Lia sent me some lemon-zucchini bread, and it was delicious. You are reminding me that I used to be a mad baker– always creating some new yummy cake, cookie, muffin, qwuffin (quiche-muffin, higher protein than standard muffin), pudding… and that’s just the sweet things! Thanks for the pointers on storing zucchini shreds and such. Very inspiring! Love to you!

these frozen cups look very neat! Zucchini is such a versatile veggie, you can shredd it into pasta sauce, put on the BBQ or use for baking. My favorite zucchini bread contains chocolate.
