Another Delicious Squash Recipe
Yesterday my blogger friend Roy A wrote a blog about Tips for Healthy Living, including diet and water intake. I also picked a few more squash yesterday, two summer squash and one zucchini. We’re just about to the end of our summer pickings and will be planting soon for a fall harvest. I love sauteed or stir fried squash cooked in avocado oil but yesterday I came up with another delicious squash recipe to go along with Roy’s healthy diet.
After washing the squash, I sliced the three of them in thin slices. I even decided to add half a sliced onion. The next step was to add a small amount of avocado oil to a frying pan, add the vegetables and stir fry them up until browned.
It only takes about 15 minutes from slicing to cooking to prepare this delicious dish. I heated up some marinara sauce, stirred it with the squash and onion then sprinkled with parmesan cheese. OMG this was delicious!
Since I’m doing good with my eating, I decided to air fry another piece of salmon to go with the squash. Air frying in my oven takes less than 10 minutes and the only thing I don’t like about cooking it this method is the skin doesn’t brown. In a few weeks I’ll go back to pan frying my salmon in lemon butter sauce. This is such a quick and easy meal to prepare plus it’s healthy and filling! I think this will be my new “go to” squash recipe!

Hi Martha – You know how much I love your recipes… However, I am not a huge squash fan and may have to pass on this one. No offense!
However… my neighbor just yesterday said she had too many vegetables in her garden and will be dropping some off. If squash is in there, I am coming back for this recipe!
By the way, my air fryer has a broil setting. Perhaps you can cook your salmon a little less, and then flip the salmon so the skin is on top and set it to broil for a short time. That could brown the skin the way you like it.

Oh Paul, he have to try this recipe for squash! With the sauce, it actually “changes” the flavor and you really can’t taste just squash! Thanks for the air fryer tip! Our air fryer is a setting in our oven and I didn’t even think about flipping it to the broil mode! I will do that next time!

LOL We have dinner early Tamara so the food doesn’t leave a heavy feeling during the evening. So dinner will be served between 1 and 2. I hope that works for you! Hugs!!!

Squash is so good! I cooked mine with Cauliflower steak in the oven yesterday with spices and olive oil. So great! I love squash with marinara and parmesan, so I know your was delish!
Oh Cindy, that sounds delicious too! With all the squash I have frozen, I’ll have lots of ideas to come up with and some will be oven baked!

ZUcchini is sliced up and “tossed” with tomato sauce and parm ( vegans can easily make that dairy-free cheese- FYI Trader Joe’s has a reasonably priced vegan cheese assortment)…Nice healthy choices- Salmon, nice choice there- it is a very healthy choice to make- with these healthier choices Martha will be around a long time writing her blog with Lia!
I love squash Pamela and I always use Avocado oil with I stir fry. I learned it has a lower smoke rate and doesn’t seem to splatter like regular oil. I’ve got another great recipe for tomorrow!

Ahhh adding carrots would be a great idea Roy and I have a freezer full of Lia’s carrots! That’s what I like about this challenge, others always come up with more ideas. I will definitely add carrots and peppers next time!
