A Week of Left Overs

Have you every seen the movie Groundhog Day where weatherman Phil (Bill Murray) gets trapped in a time warp after being caught in a blizzard? Day after day he woke up and it was the same as before. Well I love leftovers and last week was my Groundhog Day when I had the same meal over and over! But I made variations to the original meal by adding different ingredients, making five delicious dinners taste different and have more variety. Here is my story and I’m sticking to it.

To begin, on Saturday Chris surprised her daughter and four grands and we went to the Medieval Times show and dinner. We were treated like royalty in our front row seats and the kids were so excited! The Blue Knight even tossed us carnations!

There was so much food we ended up bring home leftovers, this is only part of what we brought home. YAY, my favorite!

Beginning of my leftovers

Since we had been on the go all week and I had lots of BOGO coupons we ended up going to Zaxby’s a few times but I wanted to make a nice home cooked dinner on Sunday before Chris and Bryon headed home. I came up with the idea of making Rich’s and my special New Year’s Eve dinner of shrimp and scallops. Since it was three days early, we called it our New Year’s Eve, Eve, Eve dinner. I grilled shrimp and tossed them in the pasta with Alfredo sauce with a side of broccoli and grilled scallops. Bryon made the garlic toast while I prepared the dinner. Notice there are only two plates, Chris preferred her leftover Zaxby’s chicken!

Monday came along and I still had a Zaxby’s BOGO salad coupon so Alex and I had that for dinner. But then for the next few days it was left over time!

For my New Year’s Eve dinner I had the leftovers from Sunday but I added some chicken from Medieval Times dinner and mixed the broccoli in with the pasta and shrimp. I also had a shrimp cocktail to go along with it. My centerpiece was the Lego roses my almost 10 year old great grandson made for me in memory of Pop.

Wednesday, leftovers day 3 I fried up a few bacon pieces and added that to my meal. I even found a hidden piece of shrimp in the pasta! For day 4 I pulled a piece of fried chicken breast apart and added that since I eaten all the bacon the day before. I forgot to take a picture of this one.

Friday came along and I thought I would have run out of ideas but, nope! There were a few pieces of the fried chicken left so I added some dried cranberries and when I heated it up, the turned out so juicy and delicious. I think this was the most tastiest of them all!

I still had enough left for one more meal that I planned to have Saturday but my sweet neighbors Rusty and Linda brought me over a Southern Seafood boil meal and was that delicious! So I have one leftover meal from my original New Years Eve, Eve, Eve dinner!

Sunday came around and I planned to have my last bit of leftovers until my neighbor Susan brought over homemade chili and hot out of the oven cornbread! I couldn’t turn that down and it was so good on a chili afternoon. I have such great, caring neighbors!

But Monday rolled around and I finally had my last meal of leftovers from my New Years Eve, Eve, Eve dinner! Since there was still chicken and cranberries in the mix I didn’t have to add anything except I sprinkled it with Parmesan cheese just to make it different. LOL Each meal was a bit different and oh so good!

I love stretching food and when it’s something delicious I don’t mind eating the same thing over and over. It’s like Groundhog Day! LOL
