A to Z Zucchini
We did it, Lia and I completed the A to Z blog challenge with this last letter of “Z”! Since Lia loves gardening and baking it has to be A to Z Zucchini!
Last year we had a great yield of zucchini squash and most went for bread. The first batch we made I shredded it by hand but the very next week I received a mini chopper to give my opinion on and what perfect timing! The first picture is our hand shredded and the other is from our mini chopper.
I don’t peal the zucchini, just cut in chunks and Lia put them in the mini chopper to chop it up. What a time saver and so much fun!
When we were over-run with Zucchini and didn’t have time to make bread, we chopped and froze them in half cup servings. This makes it easy when Lia is ready to make more zucchini bread, just take a bag or two out of the freezer and add to the bread mix.

Our garden is started this year and the zucchini plants are doing very well. We are looking forward to making more yummy zucchini bread! Besides being delicious, zucchini has many health benefits. The A to z challenges are one of the most difficult ones to do. I can’t say, I have try it, yet. Maybe I will do it with the mystic dream interpretations.
