A to Z Vegetables
We’re winding down to the last few letters on the A to Z blog challenge with letter “V” today. A to Z Vegetables is about some delicious vegetable dishes Lia and I like to prepare. While Lia isn’t a big fan on many at least she gives them a taste.
My favorite vegetable dish is cauliflower and broccoli casserole. When Lia and I first came up with the recipe, we just started adding ingredients in the bowl. The best was when we added dried cranberries and slivered almonds. Now I’m hooked at adding those is so many dishes we come up with. http://themarthareview.com/baked-broccoli-cauliflower/
If you want a refeshing salad, we have a cauliflower recipe for that also! One is similar ingredients as the casserole but with a delicious homemade raspberry vinagrette dressing. The next salad was just cauliflower since we didn’t have broccoli left but with the added salmon it was so delicious! This would also be great with tuna and it is so filling.
One more cauliflower dish and we added yellow squash. All the ingredients were mixed together and cooked on the stove top. This is great for breakfast with eggs or as a meal for dinner. I love cauliflower and these are just a few different meals I have made with this vegetable. Pop loves stuffed peppers and Lia helped me prepare one for him. She carefully pulled the core of the pepper and and stuffed the pepper with a ground beef and rice mixture. Pop loved it and it was another filling vegetable meal. We didn’t write a blog about that meal but a few years ago I made a stuffed pepper casserole with rice and ground beef mixture in a casserole dish with pieces of pepper around the top. This makes a great meal for more than one person since it’s more like a casserole instead of an individual pepper. http://themarthareview.com/stuffed-pepper-casserole/
Vegetables can be prepared many different ways and they are a healthy option for meals. Lia and I love to see what we can come up with and now that the garden has started, we will have lots of vegetables to make some surprise meals. I love veggies….and routinely have a fresh salad with every dinner 9or just a salad with added protein).
Rich and I both love salads Roy and many times just have a salad with chicken, salmon or tuna. A filling and healthy meal.
