A to Z Food Challenge – Z
Guess what day it is? It’s the end of the A to Z Food Challenge – Z! This has been such a fun challenge, thanks to Glenda who writes Mommies Reviews and her son Charlie who came up with this challenge for his homeschool project. This is my 5th blog challenge I have completed in a row! YAY ME!
So on today’s menu I have delicious Zucchini. I cook up Zucchini and yellow squash together with onions and peppers but my favorite is baking Zucchini bread with Lia. She enjoys baking and she is becoming a great bread maker!
Once again Lia was keeping her eye on the Zucchini in our garden. She would go to the garden in the morning and finally one morning, there was a perfect sized Zucchini to pick!

We found another Zucchini bread recipe with lemon so Lia had to try this one. We used our mini chopper for chopping the Zucchini for this batch and it saved so much time! After the batter was ready to pour into the pan, we ended up with a little extra so Lia made Zucchini butterfly bread! Doesn’t this bread look so yummy?
Because the lemon Zucchini bread recipe didn’t call for brown sugar, it is much lighter in color. This bread was more moist than the first batch that called for brown sugar, maybe because of the yogurt we substituted since we didn’t have buttermilk. Both these breads are delicious right out of the oven, covered with butter!
What if you have leftover zucchini? No problem, chop it up and freeze it! Lia and I put one cup of chopped zucchini in each bag and wrote the amount and date on the bag. This way we can take out what we need to make a batch or two of bread.

It was indeed a great month and you shared some great recipes. I think I will try the bread with the yogurt and to keep it keto I will use almond flour. Thanks for all the kitchen tips. I want one of those mini-choppers but I will need to wait until someone comes from the states for a visit and can bring it, otherwise shipping costs ore more that the cost of the product.
Thanks Chef William, I hope you enjoy the recipe with yogurt. I actually got some almond flour the other day to try a recipe that came with my Lakanto Monkfruit sweetener. I’m stepping out of my comfort zone and trying new things!
