A to Z Food Challenge – Y
I’ve been waiting for A to Z Food Challenge – Y to arrived because I love Yellow squash! We always have a great crop of yellow squash in our little backyard garden. There is nothing better than fresh picked vegetables for dinner.
Since the yellow squash starting growing, Lia would run out in the mornings and check on them. When they got ready to be picked, Lia grabbed her basket and went to the garden to pick the yellow squash.
Yellow squash is easy to prepare, just cut it in thin slices, add olive oil or butter to a frying pan and cook it until tender and browned. Add seasoning to taste if desired.
We also freeze yellow squash so we can enjoy it during the winter months. That’s super easy also. Cut the yellow squash in thin slices, put on a cookie sheet and in the freezer until frozen. Remove from freezer and put in freezer bags. Remember to date the bags so you can use the older bags first. This is a blog I wrote a few years ago about freezing yellow summer squash. http://themarthareview.com/freezing-summer-squash/
Fry up some yellow squash with peppers and onions and that is a meal in itself. What other foods do you like for A to Z Food Challenge – Y?
I love yellow squash. My grandpa makes a casserole sometimes. It’s one of my favorites.
