A to Z Food Challenge – U
For the A to Z Food Challenge – U I have another food that brought back memories. Unpasteurized milk is my food for today. When I was young my aunt and uncle had a large dairy farm in upstate New York. My parents would load my grandparents, my sisters and me in the car and we would go visit the farm. They had three children, 2 boys about 4 and 5 years older than me and one girl that was just a few month younger that me.
I remember us kids all going out to the fields to bring the cows to the barn and milk them. Yes we milked them but not by a machine. After the cows were milked my uncle would pour some of the milk in a bottle and we would take it into the house. When dinner time came around, we drank that milk, straight from the cow to us. Unpasteurized milk is milk that has not been pasteurized which is a process of heating liquid foods to kill pathogens for safe consumption. For years and years we would visit my cousins and aunt and uncle and we had unpasteurized milk! None of us had any ill effects from it. So this is one of the foods that took me down memory lane. Lia is dunking her cookie in pasteurized milk but if it was unpasteurized we would have to scoop the cream of the top of the milk before pouring in her glass.
So back to the food that starts with the letter U, the food I came up with is Unsweetened Chocolate. This is pure chocolate without any added sugar. It is very bitter and used for baking.
Cacao nibs are like bitter unsweetened chocolate with a soft crunch. If you like unsweetened chocolate they can be used in trail mix, as an ice cream topping or in baking.

Ah yes, the good old days are still alive here in Mexico and when we want to make cheese we visit a farm nearby and get our dairy products before they are pasteurized. The cheese (two or three different kinds) never lasts long. It is so good and none of us have ever gotten sick from it. Because I bake keto desserts I always use cacao because it has not had sugar added to it like cocoa. Now I want to get some cookies and dunk them in milk.
My grandson got me hooked on cacao Chef William. Then when I went on my no/low sugar healthy eating plan I switched almost totally over to it. I love these blogs that bring back memories!
Now, I have to bake some cookies!!!

How neat that you got to visit their farm! I don’t think I have ever been on a farm, though I have driven past them. I don’t think I would want unsweetened cocoa, if I could avoid it. 🙂

Chocolate has always been my downfall Amanda! I have cut way down but love my grandmothers dark chocolate mayonnaise cake!
