A to Z Food Challenge – Q
Some of the letters towards the end of the alphabet are getting a bit tricky when coming up with food or fruit. Today the A to Z Food Challenge – Q is one of those days. But I got it!
Would you believe I never had a Quesadilla until my granddaughter made me one in 2015??
After she finished laughing because I had never had a Quesadilla she showed me how to make them. They are so easy to make, I butter the outside of two tortillas, put one in a frying pan and load the top with a shredded cheese . Then cover with the the other tortilla and let each side brown. The cheese melts while it is browning and that’s it.
I cut it in six sections and have them for a snack or as an appetizer with a meal. Cheese quesadillas are my favorite but I have also added small pieces of cut up chicken to them.
Now on the healthy side I’ve got Quinoa. This has many health benefits including a good source of protein, iron and antioxidants plus it’s high in fiber to name a few. I was introduced to Quinoa a few years ago when I was diagnosed with non-alcoholic fatty liver disease. I had to cut out white bread, potatoes and rice so I stitched to this.
The first few times I cooked the quinoa it didn’t turn out too well. But as the saying goes the third time is a charm! I love it with grilled salmon with lemon butter sauce and the sauce leaks over to the quinoa and give that an even more delicious taste.

I love Mexican food. My favorite Mexican restaurant shut down at the beginning of March. 🙁
I’m not a fan of Mexican food Amanda, but I do like cheese quesadillas.
