A to Z Food Challenge – E
Hi it’s Lia and I’m sharing my Friday Story Time today with the A to Z Food Challenge – E. Eggs are one of my favorites and there are so many different ways I like to prepare them.
One way I like them is making Egg Salad. After GGmama boils and cools the eggs I start on the next steps. First I carefully peel them to get them ready to slice the eggs. But I have to take a big bite out of the eggs before I dump the sliced eggs in the bowl! I add a few spoonfuls of mayonnaise, stir together and that’s my delicious Egg Salad!
Egg Salad is good to serve as a sandwich with a bed of lettuce or for a lite meal it’s great with crackers.

A few weeks ago it was my mama and papa’s 53rd wedding anniversary. I woke up and made them a great scrambled Egg breakfast! I love scrambled eggs for breakfast!
Look at all the Eggplant growing in our garden! This is one of mama’s favorite vegetables. We slice it, fry it and freeze the fried eggplant so we can have it all winter!
One of the meals mama makes is Eggplant Parmesan. It’s layers of eggplant, spaghetti sauce and shredded cheese then baked in the oven. So delicious!

I love Eggs of all kinds especially Fried Egg and Bacon Sandwiches my dad and I used to have for lunch or dinner. Charlie loves Scared Eggs which is actually Deviled Eggs but when C was little he didn’t want to eat anything that had Devil in it so he changed the name to Scared Eggs. Kids what can I say.. LOL David likes Egg Salad and would like for Lia to make him some for lunch and he will check out the Crackers you serve with yours as a late night snack dinner.
Scared eggs, I like that Glenda! Fried egg with bacon sandwich, YUMM! Charlie will have to try making our egg salad!
I love scrambled eggs for breakfast, too! And who knew egg salad was that easy to make? I may have to try it.
I’m all for easy recipes Jeanine. You can always add different ingredients but egg salad is so simple to make.
I had egg salad for dinner on Monday night. On biscuits!
