A to Z Cookies, Cake and Candy
Day 3 of Lia’s and my A to Z challenge is going to be a delicious one! They other day we had a baking day! So today’s “C” blog is A to Z Cookies, Cake and Candy!
We turned the day into a full blown baking day! I asked Lia what she wanted to bake and she said cookies and cake! Hmmm okay that sounds good but then pop said he wanted peanut butter fudge so we added candy to our list!
Chocolate Crinkle cookies
After Lia pulled all the ingredients out of the pantry we started on Chocolate Crinkle cookies. Since we didn’t have solid baking chocolate I use 3 tablespoons of baking cocoa with 1 tablespoon oil to make 1 square of chocolate. I call these my Christmas cookies because I always make them for our Christmas cookie boxes! The dough is so rich and delicious and the hardest part is putting them in the refrigerator for about an hour before rolling into balls and coating the dough with confectioner sugar. Lia had to wash the evidence off her cookie dough tasting face while they were baking.
But the wait is worth it when they are finished baking, I grab a glass of cold milk to try a few warm cookies!
I’ve had this recipe over 50 years and our girls use to make them for county fair and come home with blue ribbons!
Peanut Butter Fudge
Our next project was the peanut butter fudge. This recipe is so easy, just add 1/2 cup of milk and 2 cups of sugar in a pan, let boil about 2 minutes. Take off the burner and mix 3/4 cup of peanut butter and a teaspoon of vanilla to the milk and sugar. Line an 8″ square pan with non-stick parchment paper or butter the pan, pour in the fudge and refrigerate it until it hardens then cut in pieces. Of course this too is the hardest step because everyone wants to try the fudge!

Whipping Cream Pound Cake
Our last baking project for the day was a delicious whipping cream pound cake. I have made this numerous times and it is SO good! It calls for vanilla flavoring but Alexandra said to add cake batter flavoring instead. It gave the cake a yummy taste! Lia recieved the cutest little baking pan set from my sister for Christmas so we saved some of the batter from our large bundt cake and poured it into her spring form cake pan.
Lia’s little cake turned out perfect and once we opened the spring, the cake popped out without any cracks or breaks on the bottom! Of course Lia was the first to try her cake and it passed the taste test!
While Lia was waiting for everything to cool she painted a little wooden box for her friend who collects them. She was so excited to run over and say hi and give Judy the special little box filled with cookies and fudge.
